Our new menu focuses on Sussex ingredients, featuring local producers and suppliers, all hand picked to create a totally unique dining experience.


With our all new Sussex produce inspired menu, Restaurateur, Georgie Collinson and new head chef James Chatfield have refocused the business to put their stamp on what they believe Hailsham needs.

The autumn inspired menu places focus on Sussex ingredient lead creations that will take you on a flavour journey around our countryside and the small businesses functioning and working hard to produce sensational food products in and around Hailsham.

Serving main meals daily from 12 - 9 pm. and additionally offering a set menu at lunch and for pre-theatre meals running from 4-7 pm Tuesday, Wednesday and Thursday.

Chapter 12 is well known for our stunning cocktails, fine wines and wide choice of beers.

We now focus on locally Sussex produced drinks, featuring many local vineyards on our wine list such as Hindleap, Hidden Spring and Court Garden, and now offer a wider than ever 'by the glass' range.

We also feature local breweries for our beers, such as Gun Brewery and Chapel Down and we also offer local ciders from Hunts.

And not forgetting locally produced Gins, Vermouths and Folkingtons mixers which combine to produce some of our fantastic new range of cocktails.
